Pork Rub

After the Holidays there 13# packages of Pork Rib Roast (partially dismantled) at 99 cents per pound

Rubbing Paste
2 5# Pork Rib Roasts (and fat 4 Pork Chops)
10 oz Brown Sugar
5 oz Liquid Smoke (Seems like that is way too much, could have added some honey for moisture)
5 oz Smoked Paprika
2 oz Oregano
2 Oz Cinnamon
This was a good paste consistency (I should have coated and let sit a room temperature for 2 hours
(what if you added chili paste, or curry paste?)

This has the potential for so-many mistakes
Put 2 5# Coated Rib Roasts side by side on a rack into chicken broth
Dipped my finger into liquid, and it did not taste bad (this was a lot of pork to season)
Set Instant Pot for 100 minutes High Pressure (will let pressure dissipate naturally)
(10 Minutes per pound, cold 5# roasts)

A great slop (in layers)

First, sauteed brussels sprouts (halfs) and kale greens
(reserve when done)
Second, cook rice
Start with Jalapenos, Garlic and Onions
Add Rice and Water
When rice is done, add (Frozen) Chickpeas and Brussels Sprouts
Turn Off Heat
Finish with Blue Cheese and Mustard
Amazingly Good

Next Version
Brown Lamb Neck Bones (and reserve)
Saute Brussels Sprouts and Kale in Lamb Fat (and reserve)
Saute Jalapenos, Onions and Garlic
-add Rice and Liquid
When Rice is Practically Done
-add Frozen Garbanzos, Corn, Ginger and Giardinare
-add back, Lamb and Brussels
Finish with Grape Tomatoes, Blue Cheese and Mustard

Black Eyed Peas

Cook Ham Hock with Onions for Broth
Cook Greens in Broth
Drain and skim off fat
(so avoid a rolling boil which will emulsify the fat and prevent separation of fat)
Cook Black Eyed Peas in Broth
Add Reserved Greens, Onions and Pulled Pork Hock

Serve over Rice
